What follows is a short list of vegetables which are also available in purple, blue, or dark red.
  • Eggplant
  • Potatoes
  • Cauliflower
  • Carrots1
  • Broccoli2
  • Russian Kale
  • Scallions
  • Peppers3
  • Cabbage
  • Onions
  • Beets
  • Corn
  • Rutebega
  • Kohlrabi

For a meal fit for a prince, take a variety of these, chop them into 1/4 to 1/2 inch chunks and roast in the oven. Serve on a bed of grains-we like buckwheat which can look purple if you look at it funny). We generally follow the directions for roasted vegetables in the Moosewood Vegetarian Cookbook which also has recipes for delicious sauces to go with.

1I understand, before the middle ages, the most common carrot variety was a purple carrot with an orange core. We've gotten these at the farmer's market, they're good, if funny looking.

2Unfortunately, the color cooks right out of purple broccoli.

3I suppose, technically, peppers are a fruit. The term "vegetable" covers a broad category of foodstuffs. Listing peppers suggests that I should list grapes, and many varieties of berry also. Make dessert.
