I always strive to finish something once I've started it, but I'm sad to say that I often don't...not because I give up on a concept, but because once I've thought of it and proved it can be made, I totally lose interest in it

I don't think leaving art unfinished is irresponsible if it is put aside to make room for other equally or more worthwhile art.
Now, if you put off doing your one great masterpiece in favor of making cell phone charms, THAT might be irresponsible. Unless, of course, cell phone charms are your one great masterpiece. That creates a whole different set of questions.
I don't think I've been drawing comics long enough to know, but I think I'm generally happy to finish what I start, because I'm trying to innovate throughout it. I mean, there's always twists and stuff that I can put in even when I start pencilling, that make it better than I originally imagined. And so far, that's kept it fun for me.
But then again, I've always been more of a finisher than a starter--I enjoy coloring or toning waaaay more than pencilling. LOL we should be a TEAM!!!
As for whether it's irresponsible...I dunno, I guess it can be? Finish what you start? But I don't think I'm qualified to say because it happens to be easier for me.
Not completing art... I think it would only be irresponsible if the art is for someone else. If it's just for you, then it's up to you whether you want to completely finish it, or just like the idea.
I think it depends on the situation but I think if it's personal than it's mostly just a result of curious nature. It happens to me a lot with writing and sometimes art but I think it has to due with my personal half-heartiness or being too intimidated by the concept itself.
