I highly recommend the book Slow Cooker Revolution put out by the America's Test Kitchen/Cook's Illustrated/Cook's Country conglomeration. I have not had a bad recipe out of there yet.
Ooh, I'm so glad you asked. :) We did "Navré je suis d'un dart penetratif" by Dufay for the procession (lyrics are here). We meant to play "A ma dame playsant et belle" by Hugo de Lantins (I don't have a link for that, but can send you the sheet music with lyrics -- it mentions giving the lady a wreath, which was why I chose it *grin*) for the order greeting, but then they sent the group out of the hall so we wound up doing that for their Majesties' departure. :) The other piece we prepped was "Belle, bonne, sage" by Baude Cordier (lyrics and music here) -- but as it turned out, there wasn't an opportune moment to fit that into court. :(
