Check with the DIY gurus...but I *think* what you want to do is paint an even line *almost* to the ceiling (about 1/4inch from the top). Then you even up the inevitable over-paints by cutting-in (paint from the ceiling down to that line) with a color that matches the ceiling. Likely off-white. The walls will look straight (even though they never are). Perhaps I'm not the the best person for painting advice but I've played that game and this worked for me better than showering myself in dusty popcorn while cursing the textured paint gods.
