I can see your point. It's not often I give gift cards. My sister and I bought my other sister a present and gave her a gift card. We chose to do this as my sister being a single mum doesn't get a chance to choose things and buy things for herself and we wanted her to be able to do that. So maybe sometimes they are appropriate.
I quite like receiving a gift card, but giving them does feel a bit impersonal. I'm horrible at shopping for gifts though, I get so over-anxious - wanting to give the perfect thing but never quite sure if something is right. Fortunately, in my family we swap lists of things we want. So you can know you're buying something that will be appreciated, although there will still be an element of surprise since the person doesn't know what you'll choose from the list.
