Just made this tonight and it's delish, and primarily vegetarian, and gluten free. I'm sure the bacon can be replaced with the oil of your choice. Nice low cal count too.

1 can corn, drained
1 can black beans or small kidney beans, rinsed and drained
2 oz shredded cheddar cheese
2 stalks celery, chopped (optional)
1 small red or white onion, chopped (optional)
1/2 green bell pepper, chopped (optional)
Salt, pepper, cayenne to taste
Mix and serve cold (for instant serving, pre-refrigerate all ingredients). Serves 2-4 as a main dish (depending on how many veggies you used).

It's one of the few Eating Well recipes that have worked out for us as is flavor wise, and it goes really well with my hub's spicy tortilla chips. Nuuuuummmmmyyyyyy!
