I've been in a funk lately which I am beginning to think is caused by simple under-nourishment. It could be SAD, which I'm never even sure I suffer from because winter always coincides with SUPER HIGH STRESS TIME. For once I actually don't feel over-stressed. There's such a variety of food in these cookbooks that I feel certain we'll be able to find some delicious stuff. Then we'll scan 'em and I'll email you the document, 'cos I'm out of printer ink or I'd just straight photocopy. <3
We love you very much and this is something we can possibly help with.
Also, there's a lot to be said for nut milks -- almond is really yummy -- and egg replacers/silken tofu in cooking. And tofu scramble is delicious. I know y'all don't wanna eat a tonne of soy, we don't eat a tonne of soy, but there are other things like seitan and tempeh (admittedly soy-based, but fermented so your body reacts differently) that are yummy meat alternatives.

I don't really like tofu or tempeh. :/ I'll give seitan a go, I haven't liked it in the past but I haven't had it prepared well. I'm not at all sure I trust egg replacer though. What is that even made of?
I can think of plenty of things I can eat, (for example: vegetables and grains) when I can cook, it's just that my usual stock of little-to-no preparation foods is pretty much zero at the moment. When I have the time to cook it won't actually be much of a problem, and in time I'll build up a new stock of recipes and a freezer full of home-prepared foods I can actually eat that AREN'T meat -- bean patties instead of chicken patties, barley stew instead of corn chowder. It just hasn't happened yet.
I will definitely take a look at your books though. :)
