what kind of cook book are you planning on doing?
As far as your open stock idea, it's funny b/c my friends and I were just talking about this the other day and one friend said that ebay had some really gorgeous and ornate individual dishes, for a fair price too... you should check it out.

Actually, there's two I plan on doing. One is more family-oriented. I have been wanting to compile a ton of (extended) family recipes and have them in one book. I hate losing/misplacing recipes, having others lose/misplace/forget recipes, etc. There's so much culture in my family that I thought it would be a nice idea to condense it all and show it off. We're not just talking new mexican/mexican here- there's italian, irish, french, german, spanish...so much to add into one book. Anyone who makes a submission will have it printed up. Of course, I'll have to edit, rework/update some of the older submissions, mostly for food safety and health purposes while still maintaining the recipe's integrity. I'm also a fan of including a bit of history along with the recipes. The other motivator for this is just simply getting tired of having to recall a recipe off the top of my head everytime someone asked for it. I have a 'Roasted Plum Napolean with Mascarpone Cream' recipe that is constantly in demand from family and friends. I made the
