how are you going to make a vegan carrot cake? cake has milk in it. milk = dairy. dairy = not vegan.

1 cup sugar
1 cup brown sugar
2 cups flour
1 tsp salt
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
3 cups finely shredded carrots
1 cup vegetable oil (can substitute applesauce for half of this)
2 tsp vanilla
4 egg substitutes (enger-g)
½ cup chopped nuts
½ cup raisins
1 can Duincan Hines Cream Cheese Frosting (yes, it is vegan!)

thats the recipe from www.veganmeat.com
but any other kind of cake would have milk.
