try WWOOFing locally to get a bit of that feeling - there's some great places on Cape Cod, actually; cranberry bogs that need help in winter as well. i'll send you some info from my catalogue when I get home in August (although it will be a year old, you may just want to bite the bullet and pay thirty bucks for a current one).

also, if you sign up for couchsurfing (www.couchsurfing.org) you can probably find some really cool places & people, near and far, to help you explore some of the things you mentioned...
