I'm in class so this isn't going to be a long post. Don't worry, my classes on Wednesday have breaks since they're over two hours long each, I'm not posting during lecture! What study is it that showed the effect of brainwaves on each other and do we actually emit waves that can sync with someone? That sounds more like scifi than real...

Maybe we can test this by pressing our heads together

That's basically what all the singers and poets have been talking about, right? Sharing the same views, looking at the same direction, and so on. This also explains why people are unhappy with their partners...

What I'm wondering is that... do brain waves change over time? Can a couple who's in sync grow out of it, or vice versa?

Sadly I think it is possible to grow out of it. Ever felt madly in love with someone for a time and then one day you notice you can't even think about them that same way? When we're born till when we die our brains are constantly changing, making new neural connections while others die off. Hence the saying, "use it or lose it," if you've ever studied something like a language. Perhaps the best way to safeguard against this could be proximity? Say if two people were in sync maybe the best way to avoid losing that is by staying within each other's realm of influence. But then again that doesn't always work either...

This could potentially be a great way to understand why people's taste changes, what they want or don't want, and think of how many different things could affect the changing of their brain waves like the environment, choice of study, social groups, family, recreation. Kinda takes the magic out of it all though...
