Can't believe the method for preparing a duck is like that. The method of preparing a chicken for us is to cut it's neck until it stops breathing but I think piercing its heart is a little too much.
And about the fish, I think it's proper to take out the gills and innards first before cooking it.
Anyways, hope you enjoy your celebration there^ ^

I remember seeing in the wet market where the sellers put the chicken in boiling water to remove feathers. I hope they are not alive when that happened.

Ah yess, that's why sometimes I dread chinese cookings. I mean, they even want to eat rats, civet cats, bats, frogs and dogs even! I remember they used to hang out the dogs killed for meat out in the open on the roads.. it's horrifying.
It's so cruel to the animals to kill them in such horrific and they're still writhing in the pan eek =( I have seen the koreans eating squids when they're still alive and the Japanese cutting out sashimi from the stomach and put back the fish with its stomach cut out back into the tank!!! Ahhh
