After watching the finale once, I felt all kinds of empty and not too sure whether I liked it or not, but after re-watching and focussing on the good things instead of the bad ones, I come to the conclusion:
I feel the way you felt when you first watched. I have to say that there was too much about the episode that I didn't care about so overall it's apretty flat feeling. That said, I loved all the same stuff you did. I didn't care much for gay couple but I did love "Okay, this is so random, but I'm actually a midwife" line.
I loved Todd and Patrick and the fact that they casted the leek-mushroom-guy for this.
Try to focus on the good while re-watching, it really helps. It was a pretty amazing finale, I think. But I still can't process, that this was the very last episode to discuss about. No more Fridays coming home from knowing that there will be a new episode waiting for me.
This finale should have been two hours (or, you know, another 8 episodes away--or another season) to give us what we wanted. I do agree with pretty much everything on your list, both the good and the bed. In particular, I would have loved more personal Cohens-Ryan time, but of course given the set-up there was no reason for it; Ryan was still going to be with Sandy and Cohen (for which--yay! Weekends with the family, babysitting time, care packages to take back to his dorm, Sandy advice about courses, Kirsten advice about his long-distance relationship with Taylor: we'll just have to imagine and write about all of that

Fox should have given the show a two hour finale. That's the very least they could (and should) do for this show that brought so many young watchers throughout the years. But apparently being grateful is not a character trait of Fox. What a surprise.
or which--yay! Word. This is the best thing ever. Also, Sandy is teaching in Berkeley, so he and Ryan could bump into each other at the campus, meet for a coffee or for lunch. And Ryan could overhear law students talking about the new teacher with the crazy eyebrows, who, as rumours say (spread by a random student from Newport), has once adopted an ex felon. Okay, I'm reading way to much into this...
So I guess what I like most about the finale is, that (even if they didn't show us much Cohens+1) they created the perfect basis for it. And that I can live with.
