I've thought about joining a co-op, but we couldn't manage to use that many fruits and vegetables before they spoil. I usually do my shopping weekly. I make a menu and get only the things I must have on the list I get from that menu. I normally like to keep stocked up on some extra things, but things being as tight as they are, I've cut way back.
If you can't use that many fruits and veggies, consider canning them. It's so simple, a second grader could learn to do it easily. Since we've joined, we've had A LOT of meals that were simply a variety of fruits and vegetables. Mixed salads, fruit plates (sometime, if I have it, I'll make it a fruit and cheese plate), huge platters of watermelon triangles, etc. Talk about cheap meals!!!
I've thought about learning to can. I used to watch my mother do it all the time. It can be a bit tedious, but it's hardly difficult. Our stores are starting to put out canning goods now. Maybe I can convince Doc to give me a little money, and I'll try a couple of things.
I'd love to get some more of those fresh green beans while they're cheap and put those up. What I'd really like is to find some fresh elderberries and make elderberry jelly. That is sooooo delicious! My mom used to make it often.

I should learn how to make organic beef jerky. We'd make a killing on that.
