Drop the temp by by about 20-25 degrees and bake longer.

Do the above. It shouldn't take twice as long (unless you have a wonked out oven), just set the timer for about 10 minutes longer than the original recipe, and then check on it. If its not done, keep checking at 5 minute intervals until its done :)

*nod* yeah, I'd just drop the temp to 325 and check often after about 35-40 minutes.
