Yes, I think so. The inns are all for both male and female. About sharing a room, I will ask. But all of these inns are very Americanized so I don’t think it would be a problem. I think it would work out either way, as long as we knew in advance and booked 2 rooms.
Are there locks on the room doors?
I am assuming so. But again, I would ask and make sure. J
How safe is each neighborhood?
I am not worried about this. Every neighborhood in Japan is safer than the one I live in right now. ^_^ And I live in a good part of Austin. I think unless we enroll in school there - we will be all right.
Are we expected to give a hosting gift (usually money)? No hosting gift. These inns are Westernized and work a lot like a hotel. But I imagine we would take a small “texas something.” These inns are family-run and I think we could make friends easily that way.
How close is each place to a subway?Taito - 3 minute walk to Tawaramachi Station on the Ginza

Are they air conditioned? I ask because of something I read on Taito Ryokan's web site?
