That's awesome; particularly what you're saying about having more energy. I wouldn't say that I have too much trouble with how much energy I have during the day, especially since quitting caffeine, but I'm always conscious of the fact that as I get older, there's a tendency for those energy levels to drop, and since exuberance is one of the things I actually like about myself (well, except when cranky old people yell at me in restaurants for being too loud), I don't want to lose that. Maybe if I can actually stop being so lazy about my food purchases, I might try this myself, for that reason. At any rate, I'm really glad it's working out for you.
I wonder if there's some alternative to slices of bread, so that you can still enjoy the pleasure of a sandwich. Maybe there's some sort of thick leaf you could use?
Yeah, having more energy is awesome! I also seem to be sleeping better at night, which is nice.
I have noticed that I still crave carbs, but less than I would have expected. And that's a good thing, because in addition to the crash from that piece of toast, I had a really bad digestive reaction that lasted the rest of the day. So that was miserable.

There are tons of recipes out there for "Paleo bread," which is bread that's not made with grain. The most common ones I've seen have been either a blend of coconut flour, almond meal, and flaxmeal, or some kind of fruit bread using almond meal. I have a whole bunch of them bookmarked, so once I'm unemployed, I'll probably do some baking
