Shark is yummy.

Mashed potato doesn't go with fried fish.

Obviously, you haven't met my family. Mashed potato goes with everything! (Although our mashed potato wouldn't have made the cut either, given the butter, cheese, and sour cream we usually put in...)

Your solution sounds really good, though. :) One thing we do sometimes is take the potato chunks, spray/drizzle with a little olive oil and toss with some garlic (either fresh and minced fine or garlic powder), then bake until tender. My whole family loves them like that, even the picky eaters.

My mother would die of shock if I actually voluntarily put mashed potatoes on the table for a meal that didn't require them (I regard them as a boring straight carbohydrate, the only purpose of which is to sop up good gravy. I had no gravy).

And yes, mashed potatoes would have meant I would've had to mash them with a bit of salt, pepper, pot water and maybe a drizzle of oil. No milk or butter, which is our normal baseline.

I had plain boiled potatoes that I cut into smaller chunks. We do a baked potato chunk thing that sounds a lot like that, only it usually has cubes of pumpkin and sweet potato through it too (and I've been known to add carrot chunks and onion eighths when I'm feeling really lazy and just want to bake everything). Oil and garlic make most things better.

You for the win! It's a bit unfair when you get that last minute expectation to cook for someone, though, especially considering the dietary issues you were working around. The stuffed capsicums sound yummy.

The stuffed capsicums were not only awesome, but an efficient use of leftovers, so I was pretty happy.

I have no objections to working around dietary concerns, as long as I have warning.

I was halfway through cooking. I had literally just pulled boiled potatoes out of the pot and was considering what to do with them. It irritated me.
