Dulce de leche ginger molasses cookies

First things first, I need to give rainingkisses from Livejournal her due credit and props for her recipe. My initial mis-start aside, I followed her recipe fairly closely. The exception was the dulce de leche itself, as I'm more than thrilled with the version I made in this entry. Just sayin ( Read more... )

One more piece of interesting information:
It would be incorrect to term sugar to be considered "a wet ingredient in baking". It's still dry :p But here's where this becomes different and important:

In the muffin method all dry (including sugar) is mixed together and then added to all wet and mixed.
In the cookie method or sometimes called the creaming method the sugar is creamed with the fat, then other wet added, and then the dry is added.
