Chai from scratch, version one

As is so often the case these days, I'm driven to make things as organically and from 'as scratch' as possible. Having recently taken the SAIT FDPR 102 - India with Chef Ian Cowley and tried the chai he made I figured I'd see if I could nail down a version I liked as much or more ( Read more... )

chai, green cardamom, black peppercorns, spices, indian tea, fennel seeds, cinnamon stick, cloves, ceylon lapsang

Initially, the tea tin name registered as 'collapsing lung'. Weird. But I DO LOVE Chai. ..in fact I have loved pretty much every bit of foodstuffs you have posted here..*sigh*

Honestly hard to say - I don't think the chef from class followed the recipe he gave us very closely ;) I think this might take a few runs before I get it nailed down to my satisfaction!

What did you not like about Ian's? How has this recipe improved on it?

Ian's was quite good, and nope this was not an improvement. Step backwards if anything :)
