There's a lot of pairings in Gintama because there's a lot of eligible bachelors ;)
It makes sense to me that GinHiji is the most popular pairing. Gintoki is the star after all. I have a friend that, the more she likes a character, the more she wants them to be the seme. Whereas I usually want them to be uke, but for some reason I want Gintoki to top!
As for recommendations, I recommend them all! I like just about everything except for hetero pairings. I only read Okita x Kagura because I like Okita.
I generally like my doujinshi to be yaoi.
I do champion Yamazaki x Hijikata and Sakamoto x Takasugi.
