This all told is around 488 cals and v. filling. You can also use less/more of the salad ingredients if you wish.
1 cup chopped baby spinach
Half cup button mushrooms (sliced)
Pizza sauce (I use Leggo's but you can also use tomato paste) 1/4 of a tub so about 2/3 tablespoons.
Sweet potato - about half a decent sized one is more than enough - cut into thin-ish slices and then halved into half-moons.
Low fat shredded cheese. (I use the weight watchers brand because it melts really well.) About 30g.
1 Tomato sliced.
Wholemeal Lebanese bread - one
Firstly, preheat oven to 180 degrees C. Place sweet potato in a single layer, you can use the pizza tray to do this. Cook till tender, about ten minutes.
Spread pizza sauce on lebanese bread, covering to edges. Place ingredients on top including the precooked sweet potato and lastly the cheese. Put in the oven for about 15 minutes or until cheese has melted.
