So, it occurs to me, in my endless cycles of seeking answers to curiosities and life questions... that making plans, while practical from preemptive logistics perspective, not always the best idea. I would love to go to a bar that served a large variety of beverages that did not contain alcohol, and also were not soda or bar 'juices'. IE, cocktails with real fruit juices rather than concentrates full of HFCS. You would need to make your pricing reflect the better ingredients, but it could work. Look at some of the tea houses that also serve alcohol for a good model on the ways you can do a diverse beverage menu. And you could also look into some of the more antique concoctions that quench thirst.

Things that come to mind: Real root and ginger beers; sugar sodas rather than HFCS versions; kombuchas; lemon, lime and citrusades; a good compliment of teas, both caffeinated and decaf, regular, herbal, and exotic.
