This is one of my favorite recipes and I make it maybe once a year. It’s real crowd pleaser, if they can get over the ridiculous pink color of it. It turns out as light strawberry lime mousse in a heavenly salty sweet crust. The crust is amazing but you really should eat it all within 48 hours because the crust will get soggy if left too long. And then it’s almost inedible. But that shouldn’t be a problem because it’s so unbelievably yum!


Fluffy Strawberry Margarita Pie

What you need:

Amount Measure Ingredient -- Preparation Method

3/4 cup boiling water
1 package (4-serving size) strawberry-flavored gelatin
1 teaspoon grated lime peel
1/2 cup lime juice (2 limes)
2 cups whipping (heavy) cream
1 cup powdered sugar
1 pint (2 cups) strawberries, slightly crushed

Crust:

1 1/2 cups crushed pretzels
1/4 cup sugar
2/3 cup butter, melted

Ready, set, cook!

Combine pretzels, sugar and butter in a bowl. Press into a pie plate chill for an hour or so.

Combine boiling water with package of Jelo, still until dissolved, add lime juice and peel, and refrigerate for one hour until thickened. It should be soft set not fully gelled.

Right before you take the thickened Jello out, whip the cream and powdered sugar.

In an electric mixer, beat the Jello until it is lighter in color and fluffy and frothy... this is a fairly subjective instruction but make sure it's a couple of shades lighter in color.

Add crushed strawberries.

Gently fold in whipped cream and pour bright pink mixture into the pie crust.

Set in refrigerator for at least 3 hours. Better if overnight.
