I've gone retro. Yep, I have returned to the games that are like life. Games like space invaders, and Centeped. Games where skill is measured only in response time, and the only goal is to stay alive to see the next level.. which is kind of like the previous level but harder. Fun time, big big. Prince of Persia is really good, and you should, at least, try it. It's definitely not Prince of Persia 3D.

If anything, the real question is whether you want to simply rent it rather than buy it, as it's right on the border between something that would be worth full price to keep, or is just short enough that one can finish the whole thing in a single rental period.

Ratchet & Clank 2: Going Commando is also a good buy if you have a PS2. As for the PC side of things, I've actually begun to become very interested in purchasing a copy of X²: The Threat based on posts from the Quater to Three forums.

As for building your own MAME cabinet, in your case I'd definitely say go for it, as with your particular crafting skills and experience, the result would be very interesting to see. There's plenty of sites out there with detailed instructions on the woodworking for the cabinets, as well as the wiring of the controls, so I foresee no problem with you producing a small masterpiece of gaming nostalgia.
