Quick steamed fish recipe

Hi all -- to make up for my super-long post most of you don't have a context for, have a fast and delicious steamed fish recipe. Made this for dinner tonight along with twice-baked potatoes and sauteed spinach. It's extremely fast and unreasonably delicious for how healthy it is.

It is indeed incredibly delicious. Can't even capture it through verbal or graphical representation. And ridiculously easy! How do you not cook??

And yes, do email! I am trying to be more around. We're homing in on a project transition, so things are a little calmer for a bit -- I actually have only been on airplanes three times this month... well, six if you count each way, I suppose... hope life and school are going well!

I usually just grab fuel that's handy. I tend to see cooking as a mess to clean up afterwards, so lazy me skips and goes and gets something else done. >.> or warcraft.

I was guessing maybe you were at the con in Montreal week before last? I was kicking myself then for not emailing you before and telling you to go to Cora's. More fruit on a plate than Smeagol and Vasya would know what to do with! Will email you now, between tasks.

jsridler and I have been to Cora's many times, but in Kingston. :) We actually did not go to WorldCon. I've never been, though will someday, I imagine. Jay's visa was finalized in mid-July, and he can't leave the country until some paperwork comes through or he loses it.

Cook fresh things! It's fast!

Cooked it for dinner last night, and it was great! My husband really liked it too. I served it over jasmine rice. We had some cherry and grape tomatoes of various sizes and colors from our CSA, so this was a perfect use for them.

I did a work-around for not having anything proper for steaming. I put the fish and other ingredients in tightly-sealed foil packets and put them in the oven, to steam in their own juices. I once had an electric steamer but unfortunately it was a piece of junk. I like your method with the bowls, but didn't have any metal ones.

Do you know of any other fish this recipe would work with? Because I've never heard of tilapia around here.

Tilapia is an ocean-friendly white fish variant -- if you have a lot of local fish up there, maybe that's why it isn't around? But the recipe would work well with rock cod or halibut -- depending on how firm they are, the cooking time might differ, but the until-opaque-and-flaky still applies. :)

Nice! Yeah, the tomatoes are mostly the wildcard for me, too -- though they're in season now and you can get some terrific farmer's market tomatoes this time of year...

You usually keep cilantro around? I'm thinking of growing it, but the squirrels destroy everything outside, and I'm not sure I want to stink up my kitchen with it all the time... :)

Ooh, farmer's market. Yes, must remember to hit the market on Wednesday and grab tomatoes for this.

I adore cilantro and have been know to munch on it raw. As you've probably noticed, it's hard to buy in reasonable amounts for a single recipe, so I usually have some lying around in the crisper drawer that I bought to make saag paneer or whatever and didn't use up completely. (Fortunately, Firefly loves it, too, so if I end up with a huge surplus I can toss him a bundle and let him play Bird of the Jungle.)

Ahaha. Bird of the Jungle = awesome. I always grab a handful and give it to Smeagol & Vasya when we have it, too -- they aren't crazy about it, but nibble, so hopefully enough to get the detox effects from it. :)

Let me know how you like the fish if you give it a shot!
