un-blah meatloaf

i like this recipe because it has a lot of flavor - really makes the mouth water. i think it's the horseradish.


2 eggs, beaten
1/4 cup milk
2 cups soft bread crumbs
3/4 cup finely chopped onion
1/3 cup finely chipped green pepper
2 tablespoons prepared horseradish
1 and 1/2 teaspoons salt
1 teaspoon ground mustard (substitution: a couple good squirts of yellow mustard)
2 pounds ground beef (substitution: 1 lb beef, 1 lb ground turkey)
1/4 cup ketchup

In a bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Press into a greased 9-in x 5-in x 3-in loaf pan (ie, bread pan). Bake at 350deg for 1 hour. Spread with ketchup; bake 15-20 minutes or longer or until a meat thermometer reads 160deg and meat is no longer pink. Let stand for 10 minutes before slicing. Meat loaf may be frozen for up to 3 months. Yield: 8 servings.

this is a good way to get rid of the end of the old hamburger buns in the freezer for the last two months..

to cut the bread into "crumbs" i like to pile 3 slices on top of each other, cut them into about 2cm strips and then cut the other way to make little cubes. it's fast too.

i personally prefer the consistency of the turkey/beef combo. also, i have to admit that every time i make this there's a bit of liquid on top when i pull it out to put on the ketchup. but it's never been a problem once it's pulled out on the plate!
