Hm, interesting question ... Ugu, I think, is made out of pumpkin leaves, onions, ginger and garlic? Maybe some spinach? I'll have to find out. Eba is made out of garri, which is ground cassava. It looks sort of like cous cous when it's dry, but you add hot water and roll it into a sticky ball, which you then dip into your food. I discovered that eating eba with beans is something that most Nigerians regard as completely bizarre. Eba is generally eaten with soups or, well, with ugu. Sorry I can't be more specific, but it's very regional cuisine and can't think of what to compare it to in terms of canadian cuisine :)
