Frozen Peanut Butter Cookies

So, today I decided to make peanut butter cookies. I saw a recipe on the back of the peanut butter jar, so I decided to start with that. But, being vegan, I used corn starch (an egg substitute in cooking) instead of an egg and it didn't really work. If you have a food processor, you could always make your own peanut butter - the Immortal Alton Brown actually recommends that. ;D

(I should note: I never have, but I'm told it's fairly easy - just peanuts 'n a lil' bit of oil. I'd look up a recipe for exact ingredients/measurements, though.)

Zombie - That actually sounds pretty good, half-baked peanut butter cookies (but I'm thinking they're only safe 'cause you didn't use eggs - egg cookies aren't really the best to pull half-baked xD). You're making me want to bake now. :C

The thing with that sort of peanut butter (the natural kind) is that it's kind of runny (I've tried the all natural kind before) and I don't think it would work very well for these cookies. The stickiness of the peanut butter is part of what keeps the cookies sticking together. And yes, they are only safe because of the lack of eggs. I don't think they would be very good with eggs. lol.

And yay for my inspiring someone to bake!

Also, I find it odd that any land anywhere does not have peanut butter. Then again, I am also sad that vegan cream cheese exists and I cannot find any where I live. Maybe I can make some...
