a couscous salad. just thinking off the top of my head, but how about a box of couscous, a drained can of black beans, some fresh chopped parsley, lemon juice, a diced red bell pepper, crumbled feta cheese, a dash of olive oil, salt, and pepper? other possible add-ons: corn, sliced almonds, a drained can of tuna?

Athenos is great -- it's mild as fetas go and mostly "salty" rather than, like, "animaly" as some sheep or goat fetas can be. BUT. If you don't want to use feta, don't! You could also cube up buffalo mozzarella, or to the salad with some nice fat shreds of a pecorino.

I love the following easy dish. American Chop Suey:

Cook 1 diced onion in pan. After 5 minutes of starting onion, add 1-lb of lean hamburger meat until slightly brown (no longer pink). Drain meat and place back in pan. In the meantime, cook a box of macaroni elbows. Add to pan approximately 3 cans of stewed tomatoes (made with Italian seasonings) and 1 can of diced tomatoes (made with Italian seasonings). While adding cans, if there is a lot of liquid, drain some of liquid from the cans before adding to pan. Place meat and tomato mixture in pot, add macaroni and mix. Store and serve room temperature. Yum!
