I'm massively in love with dairy and I'm trying to basically eliminate all cow products from my diet, focusing on beans and poultry.  In particular, I'm especially interested in bean/lentil recipes, not including garbanzo, that are quick and easy, and include little or no tomato.  I love soups.  I've looked at some recipe books, but thought that ( Read more... )

What are your feelings on pork? Because you can make a fabulous pot of black beans (for burritos, typically) or several nice bean soups with a bacon base.

(In terms of quick and easy, I've found that most bean/lentil recipes take an hour or two to make, but freeze and reheat beautifully in single-serve tupperware containers.)

Although pork is not officially verboten, I have an idea that it should be used sparingly. However, I think that some bacon or a ham hock might be ok, as long as it's uncommon. Good point about the freezing thing, too. Thanks!

I do black beans, out of a can, heated up with cumin and paprika (or cayenne) over rice. That has the benefit of being a meal I can make in about 20 minutes, 5 if I'm using leftover rice. I sometimes cook sliced chicken or pork in with the beans too.

I also have a white bean salad that I adapted from Moosewood, which is basically canned habichuelitas or cannellini, drained and rinsed, mixed with chopped celery and some other vegetable (I use tomatoes, but green pepper or cucumber would be fine substitutes), basil, salt, and olive oil. It's the kind of thing I make when the house is 95 degrees and I can't even imagine cooking ( ... )

These recipes sound just yummy, and easy too. I'll have to stock some canned black and white beans for when I don't feel like cooking.
