oooo that sucks. I've been seeing my hair guy (whom I love) for almost 10 years now and breaking up would be very hard to do...maybe your would-be stylist regurally works a particular day that your current stylist takes off and you could always schedule your appoitment for that day? hmmm perhaps too passive aggressive...maybe just the classic, "I feel like we're just not the best people for each other now, but I really hope that you're happy"
