Somehow I don't think going from 3 to 8 would work without changing the pattern a lot. Wouldn't you end up with a very much larger hat?
When I'm trying to keep my stitches from sliding off my dpns I knot rubber bands around the ends. Sure it's a kind of ghetto solution, but it works for me.
I don't think it will work unless you go back to the beginning to change the number of stitches, otherwise it will have a nice tight band and be loose and floppy towards the top. Which if you like that style is fine, but it won't look like the original pattern. That or go back to the beginning and change the number of stitches, but even then, it is guesswork on what will be an appropriate size.
I agree with the above folks, about the needle size changes. There's a bit of maths and number-crunching you'd have to do in order to make that work.
The pattern specifically states that once the decreases start, you cannot finish the hat on circs. ...Technically they're mistaken, but you would need another pair of size 3 circs. One for one-half of the project, and one for the other. Doesn't matter what length the cords are, at that point. (Click here for a video of using two circs

Thank you all for the advice! I'm not a math whiz at all but the eraser sounds like a really good idea! Or the rubber because I have some of those handy.
I'll try the rubber bands first and I will definitely post pictures when I am done. This is my first time using DPNS but I wanted this hat so bad. I sat up watching youtube videos so I could figure it out.

It's also possible to do it with only one pair of circulars using magic loop or travelling loop:
