It is so easy to take this stuff for granted, actually a lot of work goes into sound effects. I'm not totally sure about this but I think I might be right in saying that while video/action can be composed entirely digitally, the best sound effects need to be real.
Absolutely. One thing I've learned as a sound engineer *ahem* is that sound only ever gets noticed when something goes wrong, so if nobody mentions the sound you've done it right.
