I have to make a cake for our family gte together sunday and i have no clue what kind i should make!
i have one cousin who doesn't really like chocolate, but what is better than rich chocolate cake? ...not much, i tell you!
and i have no clue what everyone else likes...

sometimes cake is really hard.

Pineapple pecan cake:

2 eggs beaten
2 cups sugar
2 cups flour
2 tsps. soda
1 can (20 oz.) crushed pineapple
1 tsp. vanilla
1/2 cup pecans-coarsely chopped

Mix all ingredients together. pour into 9 x 13 greased and floured pan.
Bake 45 minutes @ 350 degrees

Icing:
1 - 8 ounce cream chees
1/2 stick butter (room temperature)
1 tsp. vanilla
1 1/3 cups powder sugar
1/2 cup pecans-coarsely chopped

Mix well. Pour over hot cake when it comes from oven

This thing is tasty as hell, though the icing ends up looking a little ugly due to the nuts.
