Tell me your favorite recipe that is fairly easy to make because I am a (hungry) new cook.

I don't eat eggplant, yellow squash (zucchini ok), or ham.

I know some of you are culinary artists please don't make me resort to Rachael Ray.

slice a few zucchini in 2 pieces lengthwise and carve the inside with a little knife and a spoon, leaving some on the skin. reserve the zucchini flesh. put salt on the zucchini.

cook some onion and garlic in olive oil until soft, add ground beef, or ground lamb, or a mix of both. when meat is no longer pink, add the zucchini flesh, a small can of diced tomatoes, thyme, salt and pepper. when the zucchini flesh is soft, add either some bread (this is a good use for dry stale bread) cut in tiny cubes or some couscous to thicken the sauce. let it simmer for a bit without a cover so the liquid evaporates a bit.

while it is simmering, rince the zucchini, dry them, then put them in the oven at 350 on a cookie sheet (covered with aluminum foil to make cleaning easier.

fill the zucchini with the stuffing, sprinkle with bread crumbs and/or parmesan cheese, cook for 30 to 40 minutes depending on size of the zucchini.

I have no concrete recipes because I don't roll that way, but I really like pan-seared tuna over a bed of wilted watercress mixed with a little bit of butter, lime, coriander, and ginger. Spinach works well too. Basically just season fish as you like (I do a quick grind of pepper and sea salt), heat up a frying pan, little bit of olive oil, tuna steaks on for a few minutes on each side. While you're cooking the fish, melt the butter and saute the ginger and coriander, then add lime juice and watercress/spinach, stir till it's wilted, et voila. It's nice with cous cous or rice. I like to grill some veg (mushrooms, peppers, tomatoes, onions) and stir that into the rice/cous cous before serving.

WHY DON'T YOU EAT EGGPLANT?! IT'S DELISH!! I had a really fun recipe for you that my sister taught me, but you said no ham. NO RECIPE FOR YOU! I can teach you to make a bowl of Lucky Charms! Mmmm!!!

A lot of the recipes I use are from Epicurious, they've got a huge database with recipes from all the major cooking magazines and more. There's also a lot of user feedback on the recipes, usually offering advice on what goes well with the dish, what doesn't, and other advice. It's been very useful to me, especially with planning Thanksgiving dinner in advance!
