I watched some Crest of the Stars and it was boring, so I gave up on it.

Kaleido Star and Princess Tutu :O

Also, I don't know if you liked Paranoia Agent, but I'd highly recommend Satoshi Kon's other movies if you did (Perfect Blue, Millenium Actress, Tokyo Godfathers and Paprika).

More?

Berserk
Cromartie Highschool
Escaflowne (the series)
FIST OF THE NORTH STAR
Genshiken
Giant Robo
Great Teacher Onizuka
Last Exile
Kino's Journey
The Place Promised in our Early Days
Voices of a Distant Star

Lesse . . . what about Yoshitoshi Abe's stuff?

Haibane Renmei
Lain
Neia Under 7
Texhnolyze

Lain is on the list. As are Voices of a Distant Star and The Place Promised, just as Hoshi no Koe and Beyond the Clouds, which is how I know them :P

For keeping an up-to-date list, http://myanimelist.net comes in pretty handy.

As for recommendations, Ginban Kaleidoscope strikes me as something you might like. I dug it. Also, Zero no Tsukaima was pretty funny. And for blatant parody with a healthy dose of fanservice, can't go wrong with Ultimate Girls.
