White Bean Salad:
makes 4 servings
Time: 15 minutes to 2 hours
1 1/2 cups dried white beans, washed and picked over or 3 cups cooked or canned white beans, drained
1 teaspoon fresh thyme, marjoram, or sage leaves or 1/2 teaspoon dried herb
3 shallots or scallions, minced
1/4 cup minced red bell pepper
