This looks awesome, Jen. And I think you can do it! I really do. For me, it was once I left Midland and all the food in our house that made it so much easier to eat healthier. Now you can put what food you want to be putting in your body into your cupboards, and you have complete control over that.
Also, it gets easier the longer you stick to it. I figure it's kind of like being a vegetarian... After a while, for me the only reason I wouldn't eat meat is because then I couldn't say, "I've been a vegetarian for bleen number of months". So I wouldn't even think about eating meat as an option.
And, as always, you are definitely welcome to Jade's and my apartment for dinner. Just give us a heads up, and we'll make extra! We're actually gonna invite you over this weekend...probably bad, but we have ice cream cake...and The Last Unicorn... mwahahahaa.
Good luck, Jenny! And you are always welcome over to our place for dinner again, or maybe we could all cook something new and healthy together! We love cooking, so we can join forces!

Choose a whole grain cereal if you can. You can read those ingredient labels, right? Kashi makes some excellent options. Plain oatmeal is an excellent choice and it only takes 3 minutes in the microwave. Shake in some cinnamon. You might also consider a bit of protein with breakfast to help control your hunger--yogurt or a little cheese or peanut butter. Read the cold cut ingredients, too--you need protein more than fat. You might consider cooking a few chicken breasts once or twice a week and eating those instead. If you want to combine food groups, try sprinkling some grape nuts on your yogurt. Let it soften a bit and it's much like a graham cracker pie crust. Or dip your apple slices in your yogurt. I love you!

Don't forget the lowfat cottage cheese.
I was thinking about you this morning. I think the last nutritional info I read indicated that it doesn't matter what time of day you eat. All that matters is calories taken in versus calories expended. The important thing is to not get too hungry so you make bad choices. So especially when you're in night owl mode, the 4 pm rule may not be that good for you.
