our refrigerator isn't hooked up to the water line (for the ice maker)

does that mean that my freezer isn't actually 'sealed,' and could that be why things are getting frosty faster than they used to (in other houses)?

Not having the water hooked up shouldn't mean anything. Do you have a frost free freezer? If its newer it should be. The Freezer actually seals with a magnent behind the rubber door seal.
The only thing I can think of is that you use your freezer more, or that more moisture is some how getting in.

I'm wondering if the the water line isn't closed off, if that would affect anything... could air be getting in through there? or if that's not possible, that the water line auto seals if it's not in use

the door seal seems to be fine, though
