It's hard enough getting animate objects looked after while you're away, but in-animate? Nooooooooooooooo! Not possible to get one of those upside-down water bottle things that gradually lets out water?
Get yourself some horticultural fleece, it's spun polyester stuff. Put the petunias and herbs in their pots up against a S. facing wall or sheltered spot next to a house wall, drape the fleece over tuck them in well and they should be fine in those temps.
As to the watering, your best bet is probably going to be an irrigation system of some sort, have a look into capilliary matting for your pot based indoor plants, you can throw it on the drainer next to the sink. The upside down soda bottle trick is a cheap way to irrigate your acers. Throw in about three per tree.
