Unsurprisingly, I like Xander/Uhura best. That would be cool.

Though I do like the linguistics of the Sam Winchester/Uhura story.

I would need to do a lot of research for the Xander/Uhura story -- pick an area in Africa and learn more about the culture. So, this is not top of my list, but I was surprised to realize how much I like the pairing. Uhura would make a kick-ass slayer, of course, but I liked her even better as a young watcher.

The linguistics of the Sam/Uhura story -- That's the scene that's clearest in my head. Uhura giving Sam a translation that involves spirits or werewolves or some other supernatural beastie and Sam going 'werewolves? really? that's just ridiculous' when really it's told him everything he needs to know.
