In all the health books and magazines I have, it always talks about eating lots of dark green leafy vegetables. So I set out to buy some and figure out what to do with it. Yeah, I did the spinach...but it was old. I needed to branch out and really start trying some new vegetables

Doug and I just made a giant pot of minestrone with a ton of kale in it! Dr. Fuhrman says kale is one of the most nutrient dense foods you can eat!

I did not know all those facts about kale. Greens rule. :D
Kale is also quite yummy in risotto. Alex made some just the other day. I only wish it didn't shrink so much when cooked.
