What to do with Kale

In all the health books and magazines I have, it always talks about eating lots of dark green leafy vegetables. So I set out to buy some and figure out what to do with it. Yeah, I did the spinach...but it was old. I needed to branch out and really start trying some new vegetables ( Read more... )

mmmm, I love kale. And your recipe sounds yummy.

Doug and I just made a giant pot of minestrone with a ton of kale in it! Dr. Fuhrman says kale is one of the most nutrient dense foods you can eat!

that sounds really good, i just may make some for my mom and myself. dad is not a big fan of pasta, so i am not sure if he would eat it or not.

It's really delicious. The mix of kale, hot pepper flakes and the feta blend so nicely! You could set some of the other ingredients aside for your dad and then mix the pasta in for you and your mom. We do a lot of that kind of stuff for Gia. In fact, she had a bowl of pasta, shrimp on the side and then I gave her green beans, cucumbers and pears. She ate every single thing!

Oh, my gosh, that looks divine. I only wish I could have feta!

I did not know all those facts about kale. Greens rule. :D

Kale is also quite yummy in risotto. Alex made some just the other day. I only wish it didn't shrink so much when cooked.
