3) Kick-arse salads. A can of beans/lentils/legumes, a can of corn, finely chopped vegies and a great salad dressing with crusty bread.

salads are a good idea, I make a great pear and bean salad, and I am always a fan of antipasto.

'My' Summer Chickpea Salad, for example:-) Of course, the feta is one of the things that makes it pretty amazing... but I have served it to the side for dairy avoiding folk.

I'd also hit Tiki up for some of her tapas like experiments that you could replicate - as i suspect with brisbane summers that they will do well as food/dinner and be fun for you and E to make :)

the nacho beans thing was great wasn't it--unfortunately there is no recipe, I made it up a I went along. I will try and replicate it and take note this time. What I can tell you is that I used pureed pears instead of tinned tomatoes.
