Dessert Help Request

Hi bakers! I need your help, please. My son's birthday is in one and a half weeks. One of the kids coming is allergic to eggs, and another is gluten- and dairy-free (and because he is, so is his extended breastfeeding mom) so they won't be able to have the cake and ice cream the rest of us are having. I'm sure I can find a vegan ice cream ( Read more... )

Hi there! I hope i can be a bit of help :) I've found several amazing vegan/gluten free/alergy free cookbooks through amazon.com. I've got both of the Babycakes NYC cookbooks and The Flying Apron's gluten free and vegan baking book, which i love. Also, i was shopping at Walmart yesterday and noticed that they have several gluten free items including cake mixes. As far as ice cream goes, I buy mine at natural food stores (and i'm pretty certain their all vegan). Look for brands like Rice Dream, Coconut Bliss, and Tofutti.

For ice cream I have found the Coconut Bliss to be the tastiest. The others just taste... kinda icky to me ( ... )

I don't have any gluten-free vegan cake or cookie recipes (or didn't before reading this post-- thanks, guys!). But my immediate thought is some kind of candy, because there are many candies that don't call for any animal ingredients anyway. Like, halvah is made with only the nut butter of your choice (almond butter, cashew butter, sunflower seed butter, and tahini all work well) and either sugar and water or honey. Chocolate-covered bananas are gluten- and dairy-free if they're made with dark chocolate (and I think Trader Joe's sells chocolate-covered banana slices in the freezer section). I have a recipe for a Mexican candy that only calls for pinto beans and water, sugar, cinnamon, and oranges, and another one that's mostly sweet potatos and sugar. There are a lot of options!
