Ok folks what can I do with ricotta cheese? I'm after something that is reasonably healthy and low cal? My reason for asking is that I heard Gordon Ramsey say it was low in fat and so I put it on my shopping list. However I put it in a baked potato and it tastes, well sweet, which was not good. Slice a carrot and courgette into ribbons. Chop onion and garlic finely. Cook veg in a little oil for 5 mins with the lid on. Boil some tagliatelle. Mix together and add big dollop of ricotta cheese and om nom nom.

Mmm. I'm horrible. I love ricotta cheese flavored with basil, oregano, and olives then warmed and spread on a nice, crusty baguette. That and any kind of pasta filled with ricotta and spinach. Yum.

On the healthy side, you can stuff a chicken breast with ricotta and spinach and that's just as good as the carb-loaded pasta. I don't know the recipe for the variation on this dish that I had, but here's one that sounds yummy. Sesame-Coated Chicken Stuffed with Ricotta and Spinach.

Chopped chives, or garlic, or artichoke, or chopped sun dried tomatoes and onions...

or finely chopped veggies like peppers, onions, celery, and carrots, with a bit of onion, savory and parsley, salt and pepper, then use it as a dip?
Or dill and garlic with some worchestershire sauce and a few drops of tobasco.
Or chopped jalapenos.
You could even mix it with ranch dressing mix, although I'm not sure how healthy that would be.

one of the diet guys, either south beach or the zone, suggest using it for dessert by adding choc chips to it, or sugar subsitute and/or coffee, I think. I think it's good with a dab of Kaluha.

Hmm, ricotta is a major component of cannoli filling, so that actually makes sense.
