They turn kind of reddish and feel soft, like your finger will go through them if you grab it too hard. From what I have read, they say that if it has a "sourish" smell, then it is already overripe and has started to ferment.
I have just taken my chances. BTW, the oven thing did work in drying them. I tasted one today and it was chewy and figgy tasting! It also got stuck in my teeth! I am now freezing them so they will keep while I decide when to try to make fig newtons (just the 3 days of boiling has already kind of bored me with figs! hahahahahahahahaha)
YAY!!!!! I am SOOOO glad the oven thing worked. I know it used to be fabulous for rising dough for making bread. Now it works for drying figs. I can't wait to taste a home made fig newton.

I am starting to think something's wrong with mine; they don't look ripe at all, but it seems like they should be. How do you know when they're ripe?
