Today's diet

I'm going to start documenting what I eat everyday for me to look back on so I can make some improvements.

12pm: Strawberry Soy yogurt

1pm: Green Leaf Salad with tomatoes, cucumbers, cabbage, raisins, and unsalted cashews with Annie's low fat ginger vinegarette dressing.

4pm: Baked Potato with a little salt & pepper with tofutti sour cream.

If you should ever need to debunk an omnivore's argument about "Not getting enough protein" (which is a common myth that keeps getting perpetrated), I suggest checking out this lj post in veganpeople and also Protein in the Vegan Diet and this book: Becoming Vegan: The Complete Guide to Adopting a Healthy Plant-Based Diet

BTW, what you're eating sounds fantastic and very healthy. MMmmm I love cashew nuts.
