We almost never baked our bread in the machine. Instead, we used a dutch oven - but that's because we mostly made sourdough and I like that kind of crust. For that recipe, it's 500F in the closed dutch oven for 1/2 hour, then about 20 minutes on 350F open. Recently, we started making baguettes, and they do go in for 350F for about 40 minutes or until the correct color.

Our dutch oven was ceramic, so there's certainly no problem with that. Do grease it beforehand, though.

You can make cute full-sized or half-sized loaves of challah bread, if you are comfortable braiding dough. Here's my favorite recipe ( ... )

I make smallish loaves whenever possible. I have a sort of muffin pan thing with 9 little loaves, also some pans that seem to fit 1/3 of a 1 or 1 & 1/2 lb recipe or 1/4 or a 2 lb loaf. and 350 for 20 minutes is my default baking.

I live alone, and fresh bread spoils fast - and sometimes you really don't WANT an entire week of cranberry-orange tea bread.

When I give bread as a gift I freeze it first so that it lasts longer.
