Meatloaf!

I don't think I've ever made a meatloaf before.  How weird is that?  So I made one last night with lean ground beef that I bought at our local butcher, and kinda-sorta followed a Gordon Ramsay recipe, with a few modifications.  It turned out quite nicely ( Read more... )

for years i thought i didn't like meatloaf and then i discovered that i don't like meatloaf with ketchup on it--i like meatloaf itself, just fine. all which by way to say that you could try it without ketchup entirely, with ketchup of your choice on the table to add if you discover it needs it. i also sometimes use a combo of ground beef and ground pork, but i don't know what that would do to your calorie count, though i doubt it would increase the carbs. i've been wanting to try to use ground lamb some day and see what happens--it tastes good in my head.

Well, Eli is kind of particular about his food, and I think leaving the ketchup off of the top would give him a sadface. :) I also like the caramelization that it gives. I thought about the ground pork idea, but I've never bought ground pork before, so I'm hesitant. The Gordon Ramsay recipe used 75% beef and 25% pork. I'm not too worried about calorie counts, and no, pork wouldn't add any carbs. Lamb sounds yummy.
